florida fun, food and friends

dinner was great last night. paula cooked an wonderful lentil soup with swiss cheese. we had a salad with carrots cranberries, and bacon with the spray/spritze raseberry vinegrette.
here is the recipe-she usually adds barley also but deleted it for me to make it gluten free.
HEARTY LENTIL SOUP
2 celery ribs chopped
1 med. onion chopped
1 clove garlic chopped
2 T. butter
6 cups broth-chick or beef
1 can diced tom.
3/4 c. dry lentils, rinsed
3/4c. 5 wild rice mix,lungburgers
1/2t. oregano
1/2 t. rosemary
1/4 t. pepper
1 c. sliced carrots
1 c. shredded swiss cheese

in large pot saute celery, onions and garlic in butter til tender. add broth, tomatoes lentils and rice along with all herbs. bring to boil. reduce heat, cover and simmer for 40 mins. or until lentils and rice are ALMOST tender. add carrots and simmer for 15 mins. more. sprinkle each bowl with cheese.
yeild:8-10 servings
2 2/1 quarts
